Chicken Tacos with a Fresh Tomato Salsa

Ingredients
4 – 6 chicken tenderloins
2 tablespoons Brazen Mexican Seasoning
Mini corn tortillas
Iceberg lettuce, thinly sliced
Shredded cheese
Guacamole
Sour cream

Fresh Tomato Salsa
4 tomatoes, seeds removed and diced finely
½ Lebanese cucumber, seeds removed and diced finely
½ red capsicum, diced finely
½ red onion, diced finely
1 red chilli, diced
1 clove garlic, crushed and chopped finely
¼ cup chopped coriander
Juice of one lime
1 teaspoon sugar
1 teaspoon Mexican Seasoning
2 teaspoon taco sauce
1 teaspoon olive oil
Salt to taste

Mix all of the above together and allow the flavours to marinate for at least 20 minutes before use. Depending on the quality of the tomatoes used you may need more salt to bring out all of the flavours.

Method
Coat the chicken tenderloins in Brazen Mexican Seasoning and cook in a dry pan. Cook over a medium heat for 3 minutes, turn and then cook for a further 2 minutes. Slice into even strips.
Assemble your taco as desired.
