Easy BBQ Chicken and Rice

This is a quick-to-prepare, easy dish for those busy evenings when you just want to get something in the oven and get on with other tasks.

Ingredients
4 whole chicken wings or 8 wingettes
2 tablespoons Brazen BBQ Seasoning
2 tablespoons oil
1 onion, diced
1 tin diced tomatoes
1/2 cup rice
Water

Method
Heat oven to 180 degrees.
Toss the chicken in the BBQ seasoning.
Heat half the oil in a fry pan on medium heat.
Fry the chicken quickly until nicely browned, remove from pan.
Fry the onion with the remaining oil in the same pan until just browning, add the rice and stir well.
Pour the onion and rice mix into a suitably sized oven proof dish.
Pour over the tinned tomatoes and half a can of water.
Pop the chicken wings on top and bake for 30 minutes or until the rice is cooked.

Serve with your favourite roasted or steamed vegetables.

Variations

I firmly believe that recipes are more like guidelines than rules. Here are a few brazen ideas for mixing things up a bit.

  • Use coconut milk instead of water for a richer, creamier dish.
  • Try Brazen Baharat instead of BBQ Seasoning.
  • Use a tin of condensed or regular soup instead of the tomatoes.
  • Turn this dish into a Middle Eastern style meal by adding some chickpeas, use lamb tenderloin instead of chicken and use Brazen Baharat instead of BBQ.
  • Make it vegetarian by using pumpkin or sweet potato instead of chicken.
