Easy Five-Spice Apple Roses

Make these beautiful little tarts for a very special dessert or just to show off a little. They look difficult but are really very easy to make with only a few ingredients. For this recipe you will need a large muffin tin.

Ingredients
2 red apples – whichever variety you prefer.
Juice of one lemon
Bowl of water
2 tablespoons of your favourite jam – I used raspberry but it can be anything you like. Experiment with different flavours have some fun.
1 tablespoons of hot water – mix this with the jam to thin it down a little
1 sheet of ready made puff pastry – cut into 6 equal strips about 5cm wide. You will need six 5cm strips of pastry to make 6 roses.
Bbutter for greasing the muffin tin
2 teaspoons of Brazen Five Spice Sugar
Icing sugar for dusting.

Method
Preheat oven to 190 degrees
Add the lemon juice to the bowl of water.
Core, halve and very thinly slice the apple into ‘c’ shaped slices. Either use a knife or a mandolin set on its thin slice setting.
Put the apple slices directly into the lemon water. This stops them going brown.

Place the bowl into the microwave and microwave the apples until they are bendy but not mushy. Do this in increments until they become flexible. This should take somewhere between 2 and 5 minutes.
If you prefer, you can also simmer the apple slices in the water in a small pan (on the stove).

Flour your work surface and lay out one strip of pastry.
Brush a little of the jam mix into the middle of one of your strips of pastry.
Line up the apples along the pastry so that the outside edge of the apple hangs slightly off the edge of the pastry.
Slightly overlap the apple slices so that each new piece begins in the middle of the previous slice.

You should end up with a wavy line of apple hanging over the length of the pastry strip with a strip of unexposed pastry below.
Sprinkle the apple with some Brazen Five Spice Sugar.
Fold the other side of the pastry up and over the apple and press gently into place.

Now the magic begins… Carefully roll up the pastry strip from one end to the other to form a flower shape.
Place this into the muffin tin to keep its shape.
Repeat these steps until you run out of apple.

Bake for 30 to 40 minutes or until the pastry in the centre is cooked.

Serve lightly dusted with icing sugar.
