Vietnamese Soup Spice Blend
A flavour-base for Vietnamese-style soups.
A Pho style spice mix.
Use with any kind of stock. Add 2 teaspoons to a tea strainer and simmer in a litre of stock for 5 to 10 minutes or according to taste.
Add fish sauce and soy sauce then pour over your soup ingredients.
At last! All the spices of Pho without the 10 hours of simmering!
Use this blend as a kind of ‘tea’ for your soup stock. Use a metal tea strainer to brew some of the mix in your preferred stock and remove after 5-10 minutes of simmering.
Season to taste with fish sauce and soy sauce, add your noodles and meat, some vegetables and in 15 minutes your speedy but delicious soup is ready.
Another use is to add slightly more of the blend to your stock of choice and gently poach some chicken in the tasty broth. Slice this up and either have in an Asian styled salad or with some rice.
Use the broth to cook some rice – it will be infused with this amazing flavour.
